You don’t have Hal sensors wired so you can’t run absolute encoder mode config with quadrature encoder.
Sounds like a miswired or broken encoder.
You also need to check the AXI but this won’t fix the problem.

Go to Faults tab , and change Foc to Max , increase Fuv to 25 and if you drift i would max Fev
if you give exact number of the servo maybe you could do some changes to the machine tab as well
