Interesting, but you must be unique in this regard as for me even changing cars IRL take some time to adjust to different brakes, even for street driving.
Perhaps once you learn two profiles, switching is easier, as they are already burned into muscle memory, just like two personal cars in your garage.
I set mine to what produces the most consistent result with limited movement range and without getting into high effort discomfort zone. Set and forget approach for all cars.
I understand that new possibility of “on the fly” change is tempting to use, just wondering for how long people will be playing with the new toy before going back to single profile that works the best for casual simmer jumping between different cars.
After all ability to change brake stiffness and travel was always present in conventional pedals, but how many actually bothered to keep changing once dialed in setup.

The pedal is of orders of magnitude more difficult as a control system compared to DIY DD wheel.

So is why the price is what it is. I never thought that the price is overcalculated, or the pedals quality are mismatching the price (not based on experience from the pedals, but my trust in Granite). It’s just a lot of money, and, compared with the prices at the market, caused a bit of a shock

Same for me, I love being able to switch between F1, GT3 and Rally within seconds.
